In a delightful twist for ice cream enthusiasts and culture aficionados alike, Washington, D.C. has welcomed its first Greek ice cream parlor, just in time for National Ice Cream Day. Nestled in the vibrant heart of Georgetown, on the corner of N and Wisconsin Avenue, Yala Greek Ice Cream opened its doors on July 20, promising a fusion of traditional Greek flavors and a celebration of community.

A Dream Born from Heritage

The founders of Yala, Chrys Kefalas and Salah Czapary, are no strangers to blending cultures. Kefalas, who cherishes his Greek heritage, has teamed up with Czapary, whose Palestinian-Hungarian roots and experience as a former nightlife and culture officer enrich the shop's narrative. The venture is a testament to their friendship and shared identity within the LGBTQ community.

The inspiration for Yala stretches back over four decades, rooted in Kefalas’s childhood memories of summers spent on a Greek island. His familial connection to the culinary world served as a foundation for this sweet endeavor.

"My business partner and our CEO, Chrys Kefalas, grew up visiting an ice cream shop on the Greek island where his family originates," Czapary reminisced. "His family has always been involved in the food industry, which inspired this journey."

From Hobby to Business

The pandemic, with its challenges and opportunities, saw the rekindling of a simple hobby: making homemade ice cream. For the duo, what began as a pastime soon blossomed into the blueprint for Yala.

"It’s always been a joke that when I retire, I’d open an ice cream shop," Czapary shared. "When Chrys proposed bringing these Greek recipes to the U.S., the idea quickly took shape and became a reality."

After perfecting Kefalas’s grandfather’s recipes at home, the pair set about finding the perfect location, sourcing high-quality ingredients, and crafting a brand that reflects their Mediterranean heritage.

A Fusion of Flavors

Yala is more than just an ice cream shop; it’s a journey across the Mediterranean. The name itself is a clever play on words—a blend of "γάλα" (milk in Greek) and "yalla" (an Arabic expression meaning "let's go"). This reflects the intertwining of their heritages.

So, what sets Greek ice cream apart? Czapary explains it as a delightful balance between the richness of gelato and the sweetness of American ice cream. "It’s the perfect middle ground," he noted, quoting an Italian chef’s praise of their creation.

Yala features 16 rotating flavors, combining locally sourced ingredients with Mediterranean imports. Maryland’s "A2" milk, known for its digestibility, provides the creamy base, while European pistachios and other regional delicacies enhance the flavors.

"We’ll have classic flavors like mint chocolate chip, but also unique offerings such as Greek yogurt with tart cherry and orange preserves," Czapary explained. His personal favorite? "I’m a pistachio enthusiast. I told Chrys I’d only pursue this if we could craft the best pistachio ice cream—and I believe we have."

More Than Just Ice Cream

Yala’s mission extends beyond serving delicious ice cream. The shop aims to recreate the warm, welcoming atmosphere of a family-owned Greek parlor. "We hope to offer more than just a great product," Czapary expressed. "We want to evoke the comfort and hospitality you’d find in Greece."

The interior of Yala reflects its core values: Φιλοξενία (Philoxenia, or hospitality), Αγάπη (Love), and Κοινωνία (Community), all celebrated through their LGBTQ identity and Mediterranean roots.

"Much like Chrys’s grandfather, who was known for his hospitable nature, we aim to create a space where everyone feels welcome," Czapary said. "Our team wears shirts with the phrase ‘all flavors welcome,’ symbolizing inclusivity and celebration of diversity."

With its unique blend of culture, flavor, and community spirit, Yala Greek Ice Cream stands not just as a place to indulge in sweet treats, but as a beacon of pride and shared heritage in the nation’s capital.
